Batch Cooking for the Family: Roast Ham & the Leftovers

In preparation for the stem cell transplant that is only a few weeks away, I am trying to squirrel away a few meals in our freezer.

 

One of my favourite ways to approach this is with batch cooking and with using leftovers as it allows for the creation of many meals with only a little extra effort.

Becoming Vegan: Cranberry, Oatmeal, Almond Cookies - Packing in the Antioxidants & Protein

Cranberries are a “super food” packed with antioxidants. Along with cranberries, these cookies contain almond flour. Almond flour is a good source of protein. Need a quick breakfast ? Two of these cookies will fill you up and keep you going for the morning.

Becoming Vegan: So Many Reasons to Eat Beets — Borscht Recipe

Along with eating a heavily plant-based diet, my naturopath wanted me to eat beets daily. Between beet juice, boiled beets and borscht, I managed to fulfill this requirement most days.

I love this soup recipe that was passed down from my grandmother, to my mother, and now my boys are learning to make it.

Becoming Vegan: Bircher Muesli - Getting the Right Amount of Iron and Protein

Maintaining good iron and protein levels was a goal as I continued on the journey of becoming vegan while undergoing chemotherapy. I believe this was possible due to the number of seeds I ate daily at breakfast.

Bircher Muesli is a Swiss staple. It's a convenient breakfast because you can make it the night before and it's ready to eat in the morning. There's no cooking required and it can be stored in the fridge for a number of days.

Becoming Vegan: Breakfast - It's All about the Seeds, 'bout the Seeds

This was and continues to be my go to breakfast. The hardest part was locating all the seeds in the grocery store. After that, it was relatively simple. This breakfast packs in a lot of essential nutrients and minerals in one powerful punch.
